Be Prepared      The boy scouts have been saying this for as long as anyone can remember, but it really does apply in real life.  This is another blurb based on where i catch myself going off track.  I try to keep a couple types of burritos and fried rice and single servings of whatever recipe I have been working on in the freezer to take to work for lunch or a quick meal.  But when I run out is where the break down comes, it is to easy to use being out of these quick meals as an excuse to hit the drive thru.      Little things will add up faster than you think.  I try to make all my lunches for the week ahead of time so I just pull them from the freezer on my way out the door and nuke them at break time.  But also having a plan for the weeks saves time and money at the grocery store.  If you are the kind of person to read a blog like this I'm sure you have seen the articles about how Americans throw away thousands of dollars worth of food each year.  Planning ahead and

Chorizo and Black Bean Burritos

Chorizo and Black Bean Burritos                                                                                                                This is another burrito I like to freeze the extras to take to work.  The chorizo has lots of flavor and balances great with the sweetness of the onions and the potatoes.  The black beans add protein and fiber while they stretch the recipe to give you more to eat.  Ingredients 6 tortilla shells 12 oz chorizo 1 medium onion 1 large potato 1 cup black beans      This is another really easy one (that is kinda my secondary theme).  Dice the onions and cut the potatoes into cubes.  Smaller is better on the potatoes because they will cook faster but size isn't really important.  We want to fully cook the onions ans potatoes even though we are keeping them in the pan as we cook everything else.  Add the chorizo and stir it all together cook on medium heat until the chorizo is fully cooked.  Chorizo will start to look al
