Slow Cooker Pot Roast      Pot Roast is a classic, and my favorite carrots and potatoes are cooked all day in the juices of a pot roast.  This recipe makes its own gravy that has a deep rich flavor you are going to love. And the next day you can laugh at all the people going out to grab a boring expensive burger for lunch while you munch on an amazing roast beef sandwich. Ingredients 3 pound chuck roast 1 table spoon flour 1 tablespoon each salt and pepper 2 tablespoons vegetable oil 3/4 cup of water 3 carrots chopped  3 potatoes chopped 1 package onion soup mix 1 can cream of mushroom soup      Lets start out by putting a generous amount of salt and pepper on the chuck roast.  Next sprinkle the flour over the roast, when the roast is seasoned and floured pat the salt pepper and flour into the meat.      Some people will tell you that you can skip searing the roast before it goes in the slow cooker, they are wrong.  Caramelizing the outside of the roast will

What is the Point      We have been getting a lot of new viewers so I just wanted to let everyone know what my blog is about and what is going on.  I write this to help myself and others save money and work towards their personal goals.  The recipes are a way to save money and still enjoy your meals everyday.  But I think the hardest part of saving for anyone is staying motivated.  To help keep you, and myself, on track I wrote the little blurbs like this.  These are mostly from my personal life, both areas where I see myself slipping and things that I notice that help me keep going.        I think the running total at the end of each recipe is the best motivator.  The running total is based on the savings verses getting a $5.00 value meal.  I use this as a bench mark because it is easy to hit the drive thru and Think that only spending $5.00 is no big deal, but its the little things that add up.  Most people don't go broke in one big chunk it is the little bites out of yo

Find What Makes You Happy      I got thinking about this because a friend from work just retired.  Dale was known for driving the worst junker cars ever, and he was the first one to make jokes about it.  One of his favorite things to do was make up a picnic basket and take his wife to listen to the free classical music concerts in the park.  But he also liked his Crown Royal, which cost a lot more than my miller lite.  So I told him I had a project for him on his last day at work.  I told him to forget about going around and saying goodbye to everyone, and that he needed to park himself at a desk and make a list of everyone that had teased him about his cars.  Then on his first day of retirement call everyone on that list and ask how they liked getting up for work this morning.  Yes I do have an evil streak.      The point is he found what made him happy.  He didn't worry about having the newest most expensive car.  And if the car is the thing that makes you happy then l

Chicken Fried Rice      I don't think many people realize how quick easy and versatile fried rice is.  I will write the recipe as if I was buying the ingredients but more often then not I make fried rice with leftovers i have around or frozen veggies I opened and did not need the entire bag for a meal.        This is another meal that I freeze and use as work lunches.  If you are planning on this going in the freezer leave out the corn, the texture gets a little funny. Ingredients 4 cups cold left over brown rice 2 table spoons oil 2 cloves garlic 1 cup cooked chicken cubed 1 cup frozen peas and carrots 1 tablespoon soy sauce 1 tablespoon fish sauce 1/4 teaspoon black pepper      Start by making sure your rice is cold to start.  Then cook up the veggies according to the package.  Now add the oil to the pan and turn the heat to medium.  The cold rice will clump up, so break apart the clumps as the oil heats up.  Add the garlic and the rice t

Vegetarian Swaps

Vegetarian Swaps      Until recently when I told a friend about my blog and she mentioned she was a vegetarian, I had not really thought about vegetarian recipes.  Some recipes are vegetarian naturally, you can't really add meat to overnight oats.       Many of my recipes can be converted to vegetarian pretty easily.  Here is a list with swaps  I recommend.      1. Breakfast Burritos - if you don't eat eggs simply swap eggs for a vegetarian egg substitute.      2. Saucy Chicken Stir Fry - The sauce makes this dish, so just leave out the chicken and replace the chicken stock with vegetable stock (I hope you make your own to keep the cost down).      3. Chorizo and Black Bean Burritos - Soyrizo is a great swap for traditional chorizo, and I think the price is about the same.  I use soyrizo in place of chorizo anytime it is on sale and no one can tell the difference.      4. Bacon Mac and Cheese Pizza - I never thought i would say these words, but just leave

Chicken Eggs Benedict     This is similar to traditional Eggs Benedict but i replace the ham with the fried chicken from the Spicy Crispy Chicken Sandwich and the hollandaise sauce with the cheese sauce from the Bacon Mac and Cheese Pizza.  Why reinvent the wheel right. Ingredients 4 chicken thighs 1 cup pickle juice 2 cups water 1 table spoon suger 1 teaspoon garlic powder 1/2 cup flower 1 tablespoon cayenne pepper 1/2 teaspoon cumin 1/4 teaspoon black pepper 1 cup bread crumbs 11 eggs 1/2 cup cooking oil 3 tablespoons flour 3 table spoons butter 2 cups milk 2 cups shredded cheddar cheese 4 english muffins 1 large potato (note: because this is basically the same as the other chicken I'm just reposting with a couple minor edits) CHICKEN       Start by removing the skin and de-boning the chicken thighs.  If you lay the chicken thighs out flat you will see there are 2 sides (they look a little like a butterfly) split the 2 sides and

Spicy Crispy Chicken Sandwich      Wow, I'm really happy with how these chicken patties turned out.  I wasn't sure about a pickle juice marinade but it really works, and the cumin give a subtle smokey flavor.  Adjust the heat to the level you like and I'm gonna warn you now I like heat so you might want to go lighter on the cayenne your first time.  But these are so good I think you will be making them again and a again. Ingriedents 4 chicken thighs 1 cup pickle juice 2 cups water 1 table spoon suger 1 teaspoon garlic powder 1/2 cup flower 1 tablespoon cayenne pepper 1 teaspoon cumin 2 teaspoon salt 1/4 teaspoon black pepper 1 cup bread crumbs 3 eggs 1/2 cup cooking oil  8 hamburger buns (or 8 slices of bread) 16 pickle slices      Start by removing the skin and de-boning the chicken thighs.  If you lay the chicken thighs out flat you will see there are 2 sides (they look a little like a butterfly) if you are serving in

Chorizo Breakfast Crunch Wrap      This is similar to the Taco Bell AM Crunch Wraps just different ingredients.  I became a big fan of the AM Crunch Wraps at Taco Bell because of the hash browns in the middle and chorizo and potatoes were made to go together so what could be better.  Of course i add onions to the chorizo for the flavor and to stretch the chorizo to make more wraps. Ingredients 8 - 10" tortillas 2 -  9 oz package of chorizo 1/2 cup black beans  1 medium onion 2 large potatoes 6 eggs      I start by shredding the potatoes and fry them up in 8 - 2 inch round hash browns.  While those are cooking chop up the onion and fry it up too.  When the onion is nearly done add the chorizo and cook that up too.  Add the beans to the onion and chorizo.  Now scramble the eggs.  To assemble put the chorizo mixture in the center of a tortilla, top with a hash brown, then the eggs on top of that.  Fold the sides of the tortilla over the top then toast i

Bacon Mac and Cheese Pizza

Bacon Mac and Cheese Pizza      I tried a couple slices of mac and cheese pizza from a local pizza place and thought "hhmm, i could do this better and a lot cheaper".  The smokey bacon in the mac and cheese puts this recipe over the top.  You are not going to find this recipe on any diet websites but sometimes you need to splurge.      I get my pizza dough from a pizza delivery place in my neighborhood, most are really cool about selling you a ball of dough for a dollar or two.  Being up front has worked for me at every place I have asked, I just tell them I want to make pizza at home and I came to them because I like the crust on their pizza.
