Chicken Eggs Benedict

Chicken Eggs Benedict

    This is similar to traditional Eggs Benedict but i replace the ham with the fried chicken from the Spicy Crispy Chicken Sandwich and the hollandaise sauce with the cheese sauce from the Bacon Mac and Cheese Pizza.  Why reinvent the wheel right.



Ingredients


4 chicken thighs
1 cup pickle juice
2 cups water
1 table spoon suger
1 teaspoon garlic powder
1/2 cup flower
1 tablespoon cayenne pepper
1/2 teaspoon cumin
1/4 teaspoon black pepper
1 cup bread crumbs
11 eggs
1/2 cup cooking oil

3 tablespoons flour
3 table spoons butter
2 cups milk
2 cups shredded cheddar cheese

4 english muffins

1 large potato
(note: because this is basically the same as the other chicken I'm just reposting with a couple minor edits)
CHICKEN
      Start by removing the skin and de-boning the chicken thighs.  If you lay the chicken thighs out flat you will see there are 2 sides (they look a little like a butterfly) split the 2 sides and you have 2 halves for the 2 halves of the  english muffins.  Next lets mix up a marinade,  pour pickle juice, water, sugar and garlic powder in a bowl and mix to dissolve the solids.  Add the chicken and marinade for 1-2 hours.  I think i you go beyond the 2 hours you start to taste the pickle to much.  Now for the breading.  Mix flour, cayenne pepper, cumin and black pepper together and put them on a plate.  Now mix 3 of eggs in a bowl big enough to dip the chicken in, then the bread crumbs on another plate.  Coat the chicken pieces with the flour, then dip in the eggs and coat with the bread crumbs.  Pop them in the fridge for an hour before cooking to get the breading to adhere better.  Next heat up a pan with the oil, be sure to get the oil nice and hot to keep the chicken from getting greasy.  Cook on each side for 6-7 minutes.


CHEESE SAUCE

Cook the flour in the oil  for 4-5 minutes stirring frequently.  Now add your milk to the pan with the flour and stir it up.  Once that is mixed together add the cheeses and mix until they are all melted together.

NOW PUT IT ALL TOGETHER

     Shred the potato and fry it up to make hash browns.  Fry up the remaining 8 eggs and toast the english muffins.  Put the english muffins on a plate then put the chicken on top and pour on the cheese sauce.  Serve with the hash browns and enjoy.

This recipe came in at $1.52, not bad for a pretty fancy breakfast.  And other than frying up the eggs you can make everything ahead and just heat it up in the morning.
