Chorizo and Black Bean Burritos

Chorizo and Black Bean Burritos
                                                                                                         
     This is another burrito I like to freeze the extras to take to work.  The chorizo has lots of flavor and balances great with the sweetness of the onions and the potatoes.  The black beans add protein and fiber while they stretch the recipe to give you more to eat.


 Ingredients


6 tortilla shells
12 oz chorizo
1 medium onion
1 large potato
1 cup black beans


     This is another really easy one (that is kinda my secondary theme).  Dice the onions and cut the potatoes into cubes.  Smaller is better on the potatoes because they will cook faster but size isn't really important.  We want to fully cook the onions ans potatoes even though we are keeping them in the pan as we cook everything else.  Add the chorizo and stir it all together cook on medium heat until the chorizo is fully cooked.  Chorizo will start to look almost grainy when its fully cooked.  Now stir in the black beans and remove from the heat, th heat of everything else will heat the beans.  Roll the mixture into burritos using the tortilla shells.  Enjoy.

 The cost is based on 2 burritos.  Like before if im having a big meal at home i have 2.  If im taking a small lunch to work I only have 1.
