Pan Seared Chicken with Risotto

Pan Seared Chicken

     Bone-in skin on chicken thighs are cheaper and in my opinion taste better than the boneless skinless chicken breasts.  You can remove the skin for a healthier dish, but keep the bones.  The bones plus a chicken ramen noodle flavor packet we saved from the Pad Thai and you have chicken stock for just the cost of the water.


Ingredients 


bone in skin on chicken thighs (2 per serving)
1 table spoon vegetable oil
seasoning salt to taste

     This is almost as easy as the overnight oats.  Heat the oil in a skillet on high heat.  As the pan heats up lightly season the chicken with the seasoning salt (go light on the seasoning salt, these can get very salty very fast).  Add the chicken to the pan skin side down and cover.  Cook on high for 2 minutes then reduce the heat to medium cook another 10 minutes and flip, 10 minutes on the other side and you are done.  See its that easy and very tasty.



Risotto 

     Risotto is easier than you think.  Really you just change up the process for making rice for a great side dish.


1/2 cup short grain white rice
2 cups chicken stock
2 table spoons butter
1/4 medium onion (finely chopped)
2 cloves garlic (minced)
salt and pepper

     Melt the butter in a small skillet and add onions.  Cook the onions until they are translucent and add the garlic and the rice.  toast the rice for 2 minutes being to stir it to coat the rice with the butter.  Start adding the chicken stock 1/4 cup at a time.  Stir the mixture frequently until the stock is nearly all evaporated then add another 1/4 cup.  Repeat this process until the rice is cooked through.  When the rice is fully cooked add salt and pepper to taste.


     I serve this with frozen broccoli, just follow directions on the package to prepare

     I have been debating serving sizes, weather to go with the serving size on the package or how much I really eat.  I decided to go big because left-overs can always be used as lunch at work the next day.  This meal comes in at $1.93, for a savings of $3.07
